Tell us, who is Miguel?
My name is Miguel Cadilhe, I’m 26 years old and I’m from Portugal. I moved to Amsterdam a year and a half ago and I’m proud to say that I’m Chef de Rang at Vinkeles, a two Michelin star restaurant and one of the best restaurants in The Netherlands.
Why did you decide to join The Dylan family?
I was looking for a relatively small but luxurious hotel to work in, as I feel this matches with what I like personally. So, I decided to join The Dylan for its top-quality service and standards. Also, I was really intrigued with the building’s interesting history. My colleagues are extremely nice and welcoming, especially in my first weeks this really helped me to settle in.
So what does a Chef de rang at Vinkeles do?
As a Chef de Rang, I ensure that guests at Vinkeles have an unforgettable dining experience. I am responsible for managing a specific section of the restaurant, overseeing the service and attending to the needs of the guests. It is my goal to create a warm and welcoming atmosphere.
Within the Vinkeles team, there is a strong sense of camaraderie and collaboration. I thrive in this environment, where everyone works towards the common goal of delivering excellence. At Vinkeles we share a deep passion for our craft, and this collective dedication contributes to exceeding our guest’s expectations.
What do you like to do outside The Dylan?
Outside of work, I like to embrace the vibrant energy of Amsterdam. I love to explore the city’s hidden gems, from cafes to bustling markets, where I can discover new flavours and ingredients. The Amsterdam canals provide the perfect backdrop for me to unwind with a well-crafted cocktail, savouring the moment and embracing the beauty of my surroundings.
Despite my love for this adopted city, I cherish my trips back to Portugal. These visits offer a chance to reconnect with family and friends who have been a constant source of support throughout my journey. The time spent in Portugal allows me to recharge and immerse myself in the familiar warmth and hospitality that reminds me of my roots.
Now tell us about your favourite wine!
When it comes to my favourite wine, of course I have to choose a gem from my home country. The Ramos Pinto Vintage Port Wine from 1982 holds a special place in my heart. Crafted from the renowned Tinta Barroca and Touriga Nacional grape varieties, this wine exemplifies the exceptional quality of the Douro region. With its deep colour, well balanced between body and acidity, with notes of chocolate, nuts and ripe fruit. I find joy in pairing this vintage port with a selection of fine cheeses. It is my favourite combination. It brings me back to my Portuguese roots and it’s a piece of home away from home.
